The production Cycle of the date palm, from flowering to the harvest, lasts 8 to 10 months, In March –April the Dates Is green and round. It reaches its final size during the summer with a yellow and smooth color. The crop takes place from the second half of September until December for variety Deglet Nour and Kanta, while for allig and Khouat allig from November to December.

Upon receipt of the dates, which are picked by hand, will be disinsectized and stored in fridge rooms.

Varieties

Deglet Nour or “finger of Light” which is the famous and delicious varieties grown for the export, represents more than75% of the country’s production. It’s known for its blond color, delicious taste and its good storage capacity as raw material in fridge rooms, which allows it to be marketed around all the year. Deglet Nour sold in the form of Branched, Standard (loose), or processed (after having been washed, dried and then glucose and dehydrated).

Common Dates : Allig, Khouat Allig, and Khouat allig wich sold in the form of processed (after having been washed, dried and then glucose and dehydrated).

Allig: Long, particularly tasty, Dark mahogany color. Crop in November

Khouat Allig: taste similar to Allig, Finer and less sugar, moisture moderate (90% production in Tozeur)

Kenta: Light Golden Color, early maturity, less sweet, half dry texture. Mainly produced in Gabes
